Last night, I was beside myself- despite my best efforts, I'd picked up a nasty computer virus. My mouse was erratic, I couldn't navigate and pages kept popping up at random.


All I could think was that I wasn't going to be able to send out the Next to Newsletter on time. Then came Arthur the PC Tech to the rescue. He ran scads of utilities, scrubbed my hard drive and rescued all of my data...my hero! Thanks, Arthur!

Coconut Lime Bars




This is in the tradition of lemon bars but with a nice twist.

Ingredients

1 cup sweetened flaked coconut
3/4 cup plus 2 tablespoons all-purpose flour
1/2 cup confectioners' sugar, plus more for dusting
2 tablespoons cornstarch
1/2 cup unsalted butter
3/4 cup granulated sugar
2 large eggs
3 tablespoons lime zest
1/3 cup freshly squeezed lime juice
1 teaspoon pure vanilla extract

Directions

Heat oven to 350°F. Combine the coconut, 3/4 cup flour, 1/2 cup confectioners' sugar, 1 tablespoon cornstarch, and the butter in the bowl of a food processor. Pulse several times until a crumbly dough is formed. Press firmly into a greased 8-by-8-inch pan. Bake until just golden, about 12 minutes.

Sift together the granulated sugar, the remaining 1 tablespoon of cornstarch, and the 2 tablespoons of flour. In a separate bowl, beat the eggs, lime zest, lime juice, and vanilla. Slowly pour the egg mixture into the flour mixture, whisking to avoid lumps. Pour the filling over the baked crust.

Bake until the lime curd is set in the center, about 22 minutes. Cool completely in the refrigerator, about 2 hours. Cut into 16 bars and dust with powdered sugar before serving.

Events take several unexpected turns as the family gets pulled apart and then mended together again with plenty of comedy, romance, and revelations along the way. November 17-19

Professor Henry Higgins takes a bet from Colonel Pickering that he can transform the unrefined, dirty Cockney flower girl, Eliza Doolittle, into a lady, and fool everyone into thinking she really is one, too! But when Higgins takes all the credit and forgets to acknowledge her efforts, Eliza angrily leaves him for Freddy, a young aristocrat. Suddenly Higgins realizes he's grown accustomed to her face and can't really live without it.

Improv This!


Join the students of the North Hall High School Improv Troupe as they explore the unplanned side of theatre. Performance is 7:30 PM on Thursday, November 19 in the school theater. Tickets are $5. Enthusiasm is mandatory.

Cranberry Puffs



Yummy cranberry and cream cheese filled wontons. A little sweet, a little spicy...a perfect snack for the holidays

Ingredients
3/4 cup fresh cranberries
1 jalapeno pepper, stem removed
1/4 cup white sugar
1/2 cup mayonnaise
1 (8 ounce) package cream cheese, softened
1 (14 ounce) package wonton wrappers
3 cups canola oil for frying
Directions
In a food processor, combine the cranberries, jalapeno pepper, sugar and mayonnaise. Process until smooth. This will be your cranberry relish. Set aside half of this mixture, and pour the rest into a medium bowl. Mix cream cheese into this half until well blended.

Lay a few wonton wrappers at a time out on a clean surface. Spoon about 1 teaspoon of the cream cheese mixture onto the center of each one. Pinch the corners together to make a triangle shape. If they don't stick, wet them with a little water using your finger. Set aside on a piece of waxed paper while you assemble the remaining puffs.

Heat the oil in a large deep skillet over medium to medium-high heat. When the oil is hot, carefully set 5 to 10 of the dumplings in the pan. Do not over crowd the pan. Fry on each side until golden brown. Remove from the hot oil using tongs and place on paper towels to drain. Serve on a platter with the reserved cranberry relish as a dipping sauce. The sooner you eat them, the better they taste.

If you'd rather, you can bake them for for 15 minutes at 375. Turn them over and bake for 5 more minutes.

N2N's Rachel Glazer was named to the All Star Cast at the Region One-Act Play Competition at GHS last Saturday. She played the mistress in EVITA. Rachel is a sophomore at North Hall High School. Congratulations to Rach and all the Hollow Horse Players!

We're still collecting both essentials and goodies to send to SSgt Latessa Bortner in Saudi Arabia- last Wednesday we shipped off a huge package full of hard candies, nuts, chips, toiletries and greeting cards. We're going to try to send out a package each week so please remember Latessa when you're in the grocery store- just pick up a non-chocolate treat such as Jolly Ranchers or flavorings for bottled water. You can scroll down to Oct. 17th's blog for a complete wish list.

She received the first package last week and here's what she wrote: "I wanted to tell you I received the awesome box of goodies from you and your friends. We are all enjoying the treats. We really don't want to sound like we require anything in particular though, we are in a relatively safe area and can get some food and sleep everyday. Working 13 hours a day on aircraft engines is a far cry from being the troops in hostile areas on the ground that our aircraft are dropping supplies to. We do however miss the freedoms and luxuries from home, and any little thing that reminds us of it makes us smile :-D Thank you all for the support. It means a lot to us over here!"
