The other night we were watching the Denzel Washington movie "Inside Man." I was intrigued by one of the songs on the soundtrack. When I Googled it, I found this video- it was made with no trick photography or harnesses of any kind.

On May 30th, our Molly turns 25. Little girl, in a blink you've grown from a happy baby in the playpen beside the cash register at N2N to a lovely, poised, brilliant young woman who is destined to change the world for the better.

Whatcha eatin'?


Pineapple-Shrimp Skewers

6 Tbsp. KRAFT Light Zesty Italian Dressing
4 Tbsp. chopped cilantro
4 tsp. brown sugar
2 clove garlic, minced
1 tsp. chili powder
1/2 tsp. crushed red pepper
24 frozen uncooked cleaned medium shrimp, thawed
12 fresh pineapple chunks (1 inch)

HEAT broiler.

MIX first 6 ingredients in medium bowl until well blended. Add shrimp and pineapple; toss to coat.

THREAD 2 shrimp and 1 pineapple chunk onto each of 12 skewers.

BROIL, 6 inches from heat, 4 to 5 min. or until shrimp turn pink.

* Not a shrimp eater? try chicken chunks instead.

These all must be dealt with immediately. If they disappear on their own, they will return. They are not self-healing. If not eradicated, they will get worse, eventually blocking you from logging on to Windows, in many cases.

Our Rachel has been named a 2011 Bronfman Youth Fellow which means she'll spend the summer traveling and studying in Israel. To help raise money for all the expenses not covered by the Fellowship, she's holding an on-going bake sale at N2N. You can pick up homemade goodies for a donation. To date, donations have totaled more than $100.00. Thanks so much!

BTW- she can take bulk orders, too, so if you don't have time to cook for that family reunion or church picnic, just call 770-534-9070. Rachel can whip up a few dozen Earth Day Cookies or Mounds Bars for you.

One of her most popular cookies so far has been the Mounds Bar Cookie. She was kind enough to share her recipe:

Whatcha eatin'?

Mounds Bar Cookies


1/2 c. butter
2 c. graham cracker crumbs
1/4 c. sugar
14 oz. pkg. coconut
1 can Eagle Brand milk
1 tsp. vanilla flavoring
1/2 tsp. almond flavoring
12 oz. pkg. chocolate chips

Melt butter. Add cracker crumbs and sugar. Mix and press in bottom of 9 x 13 inch pan. Bake 10 minutes at 350 degrees.

Mix coconut, flavorings and condensed milk; spread on crust and bake 10 minutes. Then pour chocolate chips over top and spread as they melt. Chill to set the chocolate, then remove and let soften, then cut in bars.

It's JAKES Day from 10 a.m. to 3 p.m. on May 28 at the Chicopee Woods Agricultural Center. It's a day of wildlife education and outreach.

And here's the goodie you've all been waiting for: On Monday, Cheryl's bringing in her Double Doosie Cookies- the most requested treat at all of her church functions. These you gotta try. Stop in, make a donation and a grab a handful- but come early. They won't last long!


Whatcha eatin'?


Generally, we all develop a sure-fire biscuit recipe early in our cooking career and that's that. Well, here's a secondary biscuit you'll want to add to your repertoire- what blends better than sweet potatoes and maple butter? Try it... you'll like it!

Sweet Potato Biscuits with Maple Butter
Yields approximately 18 (2-inch) biscuits

For the biscuits
2 cups all-purpose flour
4 teaspoons baking powder
1/2 teaspoon salt
6 tablespoons chilled butter, cut into cubes
1 cup cooked and mashed sweet potato (approximately 1 large potato)
1/2 cup buttermilk, plus additional as needed

For the maple butter
1 stick unsalted butter, at room temperature
3 tablespoons real maple syrup

Preheat oven to 375°

In a large bowl, mix together all-purpose flour, baking powder, and salt. Using a pastry blender (or your fingers if you don't have one) cut the butter into the flour mixture until the butter is a mix of pea-size balls and small crumbs.

In a separate bowl, mix together the mashed sweet potato and buttermilk until well-combined. Fold into the flour mixture, adding more (up to 4 tablespoons) buttermilk if necessary. The dough should form a nice ball, and be just a bit on the sticky side, as opposed to crumbly and dry. Chill the dough for thirty minutes, if desired, although you can bake them off immediately if you would like. I happen to like the way the biscuits look when the dough has chilled (a bit more crackly on top), but the flavor is not affected by this step.

Pat out the dough onto a lightly floured surface to about a 1-inch thickness (do not roll out the dough with a rolling pin). Cut out rounds using a well floured biscuit cutter. Gather the remaining scraps and repeat until all the dough is used. Place the biscuits on a large sheet pan and bake for 15 minutes (or bake in batches).

For the maple butter, mix the room temperature butter and maple syrup until completely combined and smooth. Serve with warm biscuits or refrigerate until needed.

Note: the cooked biscuits will freeze beautifully and can be pulled out at a moments notice. Just bake at 375° until heated through.
