Whatcha Eatin'?

Thanks so much to everyone who contributed to the BAKE SALE FOR BILLY. He's now home and resting. Healing will take a long time but he's making some headway.

Your contributions to the sale gave his wife, Pennie, the funds to travel back and forth to be with him at the hospital and that helped a lot.

One of our bake sale items was a particular hit and it's probably the easiest of all to make. Plus, if you're cutting calories, each cupcake is only 65 calories and if you're on Weight Watchers, they're only 2 Points+.

Pineapple Angel Food Cupcakes



It's this easy: mix one box of angel food cake mix and one 20 oz can of crushed pineapple (undrained) together. That's all. No other ingredients or liquid. Line 24 standard muffin tin cups with paper liners, then spray with Pam and fill. Bake at 350 for 12-14 minutes. They're great served with cut up fruit and whipped topping.

Good morning, everybody! Sorry this is late- Rachel celebrated her 17th birthday on Monday and Molly was home for the festivities so I took a couple of days off for family time. Thanks to Lisa for covering for me!

Whatcha Eatin'?

Baked Potato Pizza


Ingredients

  • 1 (6.5 ounce) package pizza crust mix
  • 3 medium unpeeled potatoes, baked and cooled
  • 1 tablespoon butter or margarine, melted
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon dried Italian seasoning
  • 1 cup sour cream
  • 6 bacon strips, cooked and crumbled
  • 3 green onions, chopped
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup shredded Cheddar cheese

Directions

  1. Prepare crust according to package directions. Press dough into a lightly greased 14-in. pizza pan; build up edges slightly. Bake at 400 degrees F for 5-6 minutes or until crust is firm and begins to brown.
  2. Cut potatoes into 1/2-in. cubes. In a bowl, combine butter, garlic powder and Italian seasoning. Add potatoes and toss. Spread sour cream over crust; top with potato mixture, bacon, onions and cheeses. Bake at 400 degrees F for 15-20 minutes or until cheese is lightly browned. Let stand for 5 minutes before cutting.

BAKE SALE FOR BILLY


Many of you know N2N's Pennie. Tragedy struck two weeks ago when her husband, Billy, was involved in a terrible workplace accident. He is currently hospitalized in Alpharetta in ICU.

Here at N2N, we're trying to help Pennie with gas expenses for traveling back and forth to be with Billy. That's why we're having a BAKE SALE FOR BILLY. Today we have my homemade walnut brownies. Later in the week we'll feature chocolate-chocolate chip cookies. Just pick some up for a donation. Everything goes to Pennie and Billy. Your donations and your prayers are appreciated more than you'll ever know.

Want to help? The next time you bake, double the recipe, package some up in individual servings and drop them off at N2N. We'll include them in the bake sale and, again, it all goes to help Pennie and Billy.

Carrot Controversy

Crush Fest



Crush Fest is a day-long harvest festival celebrating second grape harvest of Yonah Mountain Vineyards - Chardonnay and Cabernet Sauvignon. Crush Fest is held at the vineyard near Cleveland and will feature grape stomping, vineyard wagon tours and wine tasting. The all-day music schedule will include Curtis Jones with Insomnia, Shoal Creek Bluegrass Band and Chris Bahre and Friends. Local restaurants will provide fine fare, and over 25 vendors will be on site. Admission is $15.00 per person; $5.00 designated drivers; 16 and under free.



Whatcha Eatin'?

This is always one of the favorites at N2N bake sale fund raisers. Cream cheese brownies are deceptively quick and easy to make...and, oh, so yummy!

Cream Cheese Brownies


1 pkg. brownie mix (and oil and eggs as specified on the box)
1/2 cup chopped walnuts (optional)
8 oz. cream cheese
1/3 cup sugar
1 egg
1/2 tsp. vanilla

Grease 9 x 13 pan.
Soften cream cheese. Add egg, sugar and vanilla and beat until smooth.
Prepare brownie mix according to directions on package. Add 1 cup of chopped walnuts if you like.

Spoon half of mix in pan. Top with cream cheese, add other half of brownie mix and swirl through with spoon.

Bake at 350 degrees for 25-30 minutes. Cut with a plastic knife- it makes for much neater pieces.
