N2N family news

On Saturday, April 14, our Rachel, a senior at North Hall High School, was awarded first place in the Optimist International Oratorical Competition's regional division, held in Cumming.

This is the third tier of the annual speech scholarship contest. Each year almost 5000 Georgia middle and high school students write and deliver a 4 to 5 minute speech on a designated topic. This year the topic was, "How my optimism helps me overcome obstacles."

On May 6, she will compete against four other students in Macon for the state title and a $2500 scholarship. Go, Rach!

Whatcha Eatin'?

Vidalia onions are hitting the produce shelves this week and here's a wonderful recipe spotlighting this delectable vegetable:

Vidalia Onion Casserole

Ingredients

1/2 cup butter or margarine
4 medium Vidalia Onions, sliced in 1/4 inch rings
15 saltine crackers, crushed
1 can cream of mushroom soup
1/2 to 3/4 cup milk
2 eggs, beaten
1 cup shredded sharp Cheddar cheese

Instructions

Melt butter in a large fry pan, sauté Vidalia Onions over medium heat until clear. Reserve 3 tbsp. of cracker crumbs for topping and place remaining crumbs in the bottom of a lightly greased, 2 quart casserole. Remove Vidalia Onions from pan with a slotted spoon. Add soup and Vidalia Onions in alternating layers until full. Combine eggs and milk, pour over Vidalia Onions. Top with cheese and remaining cracker crumbs. Bake at 350 degrees for 20 to 30 minutes or until brown and bubbly.
