What's for Dinner?
Linda Davis sent us this easy, delicious recipe. It's quickly becoming a dinnertime staple at our house. Thanks, Linda!
Stuffed Mexican Shells
1 lb ground beef
1 small diced onion
1 can diced green chilies
2 pkgs. cream cheese
1 can black beans (drained)
1 can corn (drained)
1 packet of Taco Seasoning
1 cup grated cheddar cheese
1 box of jumbo pasta shells
Cook pasta as directed on box. Brown meat with onions. In a bowl, mix together remaining ingredients. Add meat and onion mixture to bowl. Stuff each shell with
mixture. Place in casserole dish. Top with salsa and cheddar. Bake at 350 degrees for 20 minutes.
Add additional toppings (salsa, sour cream, black olives, cheddar cheese, etc.) as desired.

Linda adds: One day when I was in a rush I used two cans of Bush's Black Bean Fiesta instead of the chilies, black beans and corn that the recipe
recommended and it turned out just fine.
